Quick & Easy Recipes For A Healthy Start To 2018 | Giveaway

If you’re considering ways to be healthier in 2018, like I am, you’ll be interested in ways to improve your diet quickly and easily. I’ve been guilty of not eating enough vegetables or getting enough fibre in the past couple of months. The very high amounts of saturated fats and low vitamin levels have left me feeling lacklustre and sluggish. I know so many people feel the same at this time of year.

I think in order for a new healthy lifestyle to start successfully, it needs to slot in easily with the rest of your life. Easy to make healthy meals that don’t take hours to prepare are the key to getting your new diet off to a quick start.

Personally I love lentils and am always on the lookout for new lentil recipes. They are so filling, full of protein, calcium, iron and B vitamins, and very versatile. I do cook with them often, but usually only when I’ve the time to prepare them. Depending on the kind of lentil you’re using, they can take up to 45 minutes to be cooked. It definitely helps to have ready-cooked packets of them on hand, especially if you just want to whip up a quick lunch or dinner on a busy day. I like Merchant Gourmet for this; their range of ready-to-go grains and pulses make whipping up a nutritious meal really quick and easy.

One of the easiest healthy lunches I made recently was this Puy & Green Lentil Stir Fry using veggies that needed using up, and a packet of Merchant Gourmet Tomatoey French Puy and Green Lentils. It couldn’t be simpler; just stir fry veggies in a dash of oil and add the packet of lentils. They’re already flavoured with a sun-dried tomato and basil sauce so you don’t need to add any extra spices. Instead I popped some of their Sun-Dried Tomatoes on the top. This fed both me and Sean and kept us full until dinnertime.

Taking inspiration from the recipes on the Merchant Gourmet website, I also made this Red & White Quinoa Tabbouleh. You mix a little red pepper puree, lemon juice and olive oil together. Add seasoning, and set aside. I then cooked some vegetables (anything that you have on hand will work fine). Heat the Merchant Gourmet Red & White Quinoa according to the packet instructions, and stir the dressing through it when hot. Add this to the veggies and you’ve got a high protein dish with plenty of vitamins. I added cayenne pepper as a seasoning and to give it a bit of a kick.

Merchant Gourmet have a lot of recipes on their site for any kind of diet, so have a look there for some healthy meal inspiration. I can’t wait to make the Mashed Sweet Potato With Chestnut Puree. I think this is going to be lovely and a different twist on traditional mash.

There really is so much versatility to using pulses and grains in your meals and the Merchant Gourmet products are such an easy way to add some goodness to your diet. Healthy doesn’t need to be boring. Merchant Gourmet products are so delicious and I’m going to continue using them.

    I have also been eating unhealthy foods in the last few months, I am feeling and looking awful at this moment and really need to get back on track quickly.
